The coffee showcases a softer side of the acidity spectrum with ripe stone fruits like cherry and plum playing the lead while sweet flavors like chocolate, vanilla, and hints of ginger and violet fill out the supporting roles. At medium roast, this cup is very sweet with vanilla and tootsie roll confections dominating the fruit acidity. Roasting deeper into the profile drives a cherry juice and hints of lemonade. There are more spicy notes in the darker cup and on the light side of Cuevitas some very pleasant florals of chamomile and violet. Single-original espresso will lift off your demitasse.
