Our highest-scoring coffee comes from the lush Kayon Mountains. This is dry processed with some of the highest standards and the results are in the cup: lighter roasts excel with berry fruit and a baking spice fragrance, creamy vanilla/caramel sweetness underneath. The aroma has a strawberry jam lacing the aromatically potent steam. Light and medium roasts are pretty amazing when brewed as pour over. The cup is remarkably clean. Peach puree comes to mind, the flavors juicy and clean. It cups remarkably fruit forward. Dark roasts are still delicious but trade vibrance and clear fruit flavors for pleasantly bittering roast tone more dried fruit characteristics.
