This wild-grown bean is so remote that a few hundred microlot farmers team up to get their beans to market in the rugged volcanic terrain of the Morobe Mountains. Their only means of growing and harvesting are certified organic. Farms were planted with the now-coveted Jamaica Blue Mountain seed, and it is no wonder the resemblance to the seductive silkiness found in this cup. Clear notes of almond in the light roast turn to caramel and graham cracker at medium, then chocolate in a dark profile. It is creamy and mild, even served black, dare we say almost overripe? Let this cool to drinking temp @ 135F -- it is a cup of love, giddily sweet. Dark roasts, despite 20 degrees hotter, do not reflect much deeper color but make exquisite single-origin espresso. Think: chocolate truffle latte.
