Calling this a honey process doesn’t quite do justice to the complexity of the process - ripened 24 hours before depulping, fermented 12 hours and dried 20 days. OH! From a 12-acre farm near the community of Santa Maria in Jaén, this succulent coffee is sorted for the highest-density fruit. The double fermentation yields a hard-candy, baker's-chocolate result. The texture is juicy and syrupy, the cleanliness is floral and creamy. Crisp, green-apple candy, our citric fruit turned to jammy caramelized notes such as grilled pineapple. As temps in your cup lower, it turns to a rounder, smoother creaminess. A base note of baker’s chocolate will balance this out. Single-origin espresso is wildly good, ordered dark. Not to rest on any laurels, but coffee from this farm placed 17th in 2020’s Cup of Excellence in Peru. No small feat.
