Every once in a while we come across a full-spectrum varietal, where the sweet-savory structure comes through with round, gentle acidity that leaves you with a plush, creamy mouthfeel. And this Maragogype (mara-go-heapay) is no exception, often ranking in the top 20 coffees. A very large bean that does not darken deeply, the brewed aroma begins quietly with orange blossoms and honey. A sip at 145F will lavish a sweet and brilliant acidity and a syrupy mouthfeel. Hints of chocolate creep at a lower temp where lychee and almond brittle also surface. The darker espresso profile is rich Cadbury fruited chocolate, a truly fine twist in your macchiato, latte or cappuccino. A honey-process bean, this seldom-grown Pacific Islands variety is from manicured plots to bring you a resonating character. Some coffee critics have called the Maragogype one of the finest coffee’s known but hard to maintain. Farmers are discouraged from replanting based on how dependent the quality of the coffee is on the their soil. We are so happy to be able to offer this rare microlot.
