We roast to your preference: light, medium, dark. Cupping scores are by trained professionals who grade on a points-based system by the SCA. Specialty coffee is regarded best in class — anything scoring 85 points or more, with 90+ for exceptional. Most of our beans are between 87-92. Don't always choose the highest-scoring bean. Find the cupper's notes that best describes what you like — that's your coffee.
